Dinner for 1?
Here’s a one pan plan!
Kids in bed, feeling tired and uninspired. I sometimes chuck whatever I have leftover in my fridge in one frying pan and hope for the best.
Often I have one chicken breast or salmon fillet left. I’ll smear it in curry paste on both sides (alternative could use pesto) fry it off in coconut oil and add all your veggies round the edge. The fat from the chicken will make a juice with the curry paste and coconut oil & will flavour the rest of the pan.
Here I added chopped mushrooms, asparagus & chopped tomatoes.
Serve with salad or quinoa.
